Jaggery Manufacturing Process

Jaggery (Gur) is a natural, unrefined sweetener made primarily from sugarcane juice. It is widely valued for its rich taste, nutritional benefits, and traditional manufacturing process.

1. Sugarcane Selection

Fresh, mature sugarcane is selected and cleaned to ensure high juice yield and quality.

2. Juice Extraction

The sugarcane is crushed in crushers to extract fresh juice. The juice is then filtered to remove fibers and impurities.

3. Clarification

Natural clarifying agents (such as lime or plant-based materials) are added to the juice and heated gently. This helps remove impurities and scum, resulting in clear juice.

4. Boiling & Concentration

The clarified juice is boiled in large pans over controlled heat. Continuous stirring is done until the juice thickens and reaches the required consistency.

5. Molding & Cooling

Once the desired thickness is achieved, the hot jaggery syrup is poured into molds or trays and allowed to cool and solidify.

6. Cutting & Packaging

After cooling, jaggery is cut into blocks, cubes, or powder form and packed in moisture-proof packaging to maintain freshness.
